“Maggiri” with homemade pasta

Ingredients for two servings

250 grams homemade pasta, 1 lt. meat stock (optional), olive oil (for frying), salt, pepper, anthotyro cheese for serving.


Divide the pasta into two parts. Fry the first half in olive oil until the pasta is crunchy and crusty. Boil the rest in meat stock or salted water for approximately 2 minutes.

As soon as the second half is ready, place the fried pasta into the pot and stir.

Serve with freshly ground pepper and plenty of anthotyro cheese.
